Safflower

A thistle-like annual grown for two entirely different reasons. Its florets gave one of the oldest textile dyes — safflower red was used on the linen wrappings of Egyptian mummies — and its seeds give one of the most linoleic-rich oils in agriculture. The plant sends a taproot a long way down, which is why it survives on dry ground where other oilseeds fail.
